This recipe is soooooooo yummy! My family loves it!

Ingredients: • 1 cup Maseca flour • 1 cup water • ½ cup vegetable oil • 2 lb ground beef • 1 packet goya seasoning • 1 bag seasoning blend • 1 large head lettuce • 2 cans refried beans • 1 cup sour cream • 1 cup Mexican queso, or 1 cup parmesan cheese • ½ cup salsa verde

For salsa verde:

3 tomatillos, quartered ¼ bushel of cilantro 1 jalapeno juice from one lime Put it all in a blender and blend until smooth


Sopes:

1.)         In a large bowl, mix the flour and water until it becomes like a dough. Take a small handful of the dough and roll it into a ball, and then pat it flat into a disc. Lay the disc aside and repeat until you have used up all of the dough.

2.)         On medium heat, pour the oil into a large frying pan. Then drop a few of the discs into the oil, letting them fry until they become like cornbread, turning occasionally. Then take them out of the frying pan and set them aside. Continue until all of the discs are fried.

3.)         Pour most of the oil out of the frying pan, only saving a little. Then place the ground beef in the pan, along with the goya seasoning, and brown all the way. Drain and rinse the meat, and the put it back in the pan, and turn the heat down to low. Stir the seasoning blend in, and continue stirring until it is cooked. Take the meat away from the heat and set it aside to cool.

4.)         Cut the lettuce and shred it into small pieces. Take the discs and begin smearing refried beans on them. Next, layer a small amount of the meat. Then, layer a small amount of lettuce, and on the top, sprinkle the cheese, put a dollop of sour cream, and a spoonful of salsa verde. Repeat this process with all of the sopes.

5.)         Serve about 4-5 sopes on each plate, and enjoy!
